The calculation method

Waste reduces saleable portions before revenue and packaging are calculated. Batch costs include all ingredients plus packaging per saleable portion; gross profit is revenue less batch costs.

  • Account for actual purchase units, edible yield and waste where the model allows it.

Assumptions and sources

Enter individual ingredient amounts already converted to batch cost. Use the same VAT basis for sales and costs. Excludes labour, premises, delivery fees and other overheads.
